Named for Annette's rescue, Paco, this Cab Franc is worthy of its namesake
Brick red in color with bergamot tea, strawberry, and hibiscus on the nose. On the palate, rhubarb compote, cinnamon, pink peppercorn, strawberry, and loess. Medium+ bodied and well
balanced.
Typically ripening two to three weeks before our Cabernet Sauvignon our Cabernet Franc grapes are picked by hand, sorted and lightly crushed into one-ton open fermenters. Yeast was added
and the cap was punched down two times per day for 15 days.
Aged: 18 months in 50% new French oak and 50% neutral oak barrels
