Garnet and opaque in color with earthiness, fruit, crème de cassis, and ripe Italian plum on the nose. Flavors of cassis, plum, and wet stone. Moderate balanced acidity with a full-bodied,
long finish.
Fermentation began in the vineyard using the pied de cuve method PdC. Hand-picked grapes were put into five-gallon buckets and placed in the Cabernet Sauvignon block. They were
punched down daily starting the fermentation process under the sun, moon and stars. Prior to harvest the buckets were transferred to the winery and added to the berries once they were
crushed.
