Tasting notes
Purple in color with a crimson rim. A complex, vibrant nose from the native ferment, bourbon from the AM Oak and layers of richness, with hints of black truffle. Muscular flavors of ripe strawberry, loess, vanilla, berry, and rainier cherry. Full-bodied, medium ++ with a sense of place, earthiness, and a long finish.
Production notes
Fermentation began in the vineyard using the pied de cuve method PdC. Hand-picked grapes were put into five-gallon buckets and placed in the Cabernet Sauvignon block. They were
punched down daily starting the fermentation process under the sun, moon and stars. Prior to harvest the buckets were transferred to the winery and added to the berries once they were
crushed.
Aged: 30 months in 25% new French oak, 25% new American oak, and 50% neutral oak barrels
