Deep dark garnet in color (specifically hex color #400724) with aromas of dark fruit, violets, and black cherry. A rich mouthfeel of dark fruits including blackberry, black cherry, black currant, and violets is balanced with bold tannins and acidity. Hints of graphite sneak in on the back of the long lasting finish.
Harvested in the late portion of the season, we rely on both chemical analysis and flavor analysis to determine ripeness. The Cabernet Sauvignon clusters were both hand harvested, and machine harvested, destemmed and lightly crushed. We only use gravity to move the crushed grapes and juice. No pressed wine is used in making the Moonspell. The free run
juice is barrel aged for 22 months and then blended and bottled by our winemaking team.
Aging: 22 Months in 40% new French oak, 10% new American oak, & 50% in neutral barrels.
