Tasting notes
Garnet in color with herbal notes on the nose along with dark berries and vanilla. Flavors of raspberry, cherry, strawberry with minerality and a hint of oak. Medium bodied with medium acidity. Food pairing ideas include roast chicken with herbs de Provence or eggplant parmesan.
Production notes
Typically ripening two weeks before our Cabernet Sauvignon our Cabernet Franc grapes are picked by hand, sorted and lightly crushed into one ton open fermenters. Yeast was added and the cap was punched by two times per day for 23 days. After the fermentation was complete, the "free run" was drained off of the skins into barrel.
Aging: 18 months in 20% new American oak and 20% new EU oak with the remaining 60% aging in neutral oak
