This wine is one of the finest Cabernets that we have made to date. Selective vineyards and winemaking practices were utilized to create a powerful yet balanced Cabernet Sauvignon that demonstrates the advantages that WA State has in the world of winemaking - longer growing days, deficit irrigation, and minerally rich soils from the Missoula Floods thousands of years ago. This Cabernet Sauvignon is one that you will want to enjoy for many years to come as it develops in the bottle and with aging. Cheers!
Tasting notes
Aromas of dark fruit, pepper, spice and blueberries. We recommend decanting for an hour. Flavors of currant, blackberry with hints of mocha and vanilla. Youthful, medium tannins with balanced acidity will pair nicely with a holiday roast or roasted butternut squash in duck fat!
Our favorite foods with this wine are: Grilled meats such as ribeye steaks and NY steaks, proscuitto and Humbolt Fog cheese on a baguette and any savory or spicy dish.
The Cabernet Sauvignon clusters were hand harvested, hand sorted, destemmed and lightly crushed. We only use gravity to move the crushed grapes and juice. No pressed wine is used in making the Moonspell. The free run juice is barrel aged for 18 months, thoughtfully blended by our winemaking team and bottled.
Aging: 18 Months in 2% New Oak Barrels (14% French & 8% American) the balance in neutral oak
