Tasting notes

Enticing aromas of Lambert cherry and dusty blueberry in a spice shop. Ripe blackberry, plum and cherry ride a delicate wave of tobacco and white pepper. The finish is more black fruit, blackberry, black cherry and cassis encased in a spiral of tobacco and earth. The unique aspect of this wine is the fact that it is medium bodied with very heavy dark and spicy flavors. Serve with Lamb, chops, shanks or kabobs.

Production notes

Ripe Carmenere clusters were hand pick and gently de-stemmed, but not crushed. The whole berries were fermented in small open top tanks using yeast isolated from a vineyard in Bordeaux. After a slow & cool 20 day fermentation the skins were pressed off.
